EGG DISHES

Masala Eggs: 

Boil the eggs first. Boil water and add eggs to boiling water for exactly seven minutes. Immerse them in cold water immediately and then peel the shells.

Heat a table spoon or two of Olive or Mustard Oil, Pop the Boiled eggs in and gently fry without breaking the eggs. Add a Table spoon of Curry Powder ( Choose Babas meat Curry Powder if available) and a pinch of salt.

Place the Masala eggs in a Plate and add freshly chopped Coriander leaves on top and serve hot hot


EGG CURRY:

In a pot heat a table spoon or two of Olive Oil. When hot add a teaspoon Black Jeera seeds and fry. Add one or two chopped Onions and fry until golden brown (caramalised). Next add a couple of sliced tomatoes and fry. Add a Pinch of turmeric and a teaspoon of Chilly powder or a Table spoon of Curry powder and salt to suit. Add a cup of water or more to suit. Allow it to boil then add a table spoon of whole grain English Mustard paste.

Break as many eggs as necessary into the hot gravy in different spots so they remain separated. Allow eggs to cook.

Add freshly chopped coriander leaves and serve with white Rice


Big Bil's Egg and Tomato Mash

For every egg one tomato will suffice.

Cut onions and green chillies and fry in a slow fire. till such time the colour of the onions turn brownish and water has evaporated.

Boil tomatoes in advance and carefully peel the skin.

Mix the tomatoes with the onion and continue to  fry in low heat for about 15 minutes. till the water has evaporated.

Break the eggs into a dish add a pinch of turmeric and salt and beat the egg well with a fork.

Add eggs to the fried onion and tomato and keep stirring until egg turns brownish.

Ready to serve.
